Growing up, my family always celebrated Nochebuena (Christmas Eve). I haven't done it in a few years but had my arm twisted this year. I cooked for two days. Pernil (pork shoulder), arroz con gandules (rice and pigeon peas), pollo con quimbobo y platanos (chicken with okra and plantains) ensalada con un picante salsa coco (salad with a spicy coconut dressing), bunuelos (cheese balls) and COQUITO (spiked egg nog).. LOTS of coquito! I missed doing this and plan on continuing the tradition..... Next year.....party at my house!!! You are all invited!

The chicharrones never made it to the table hehe. They are MINE!!! I actually saved some to fry up later! And tamales are too much of a pain in the neck!!!!!
